Chicken Thighs

  • 2 pounds bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

  • Preheat your oven to 425°F. Rinse the chicken thighs under cold water and pat them dry with paper towels. Trim any excess fat.
  • In a separate bowl, combine olive oil, minced garlic, lemon zest, lemon juice, black pepper, salt, dried thyme, and paprika. Mix well.
  • Pour the marinade over the chicken thighs, ensuring each piece is coated. Cover and let marinate for at least 30 minutes.
  • Line a baking sheet with parchment paper. Place the marinated chicken thighs on the baking sheet, skin side up. Bake for 35-40 minutes until the skin is crispy and the internal temperature reaches 165°F.
  • Let the chicken rest for 5 minutes before serving.
