Pasta

  • 8 ounces pasta penne or fusilli
  • 8 ounces feta cheese block of feta for best results
  • 1 pint cherry tomatoes sweet and burst with flavor when roasted
  • 1/4 cup olive oil adds richness
  • 4 cloves garlic, minced brings aroma and depth
  • 1 teaspoon dried oregano adds Mediterranean touch
  • 1/2 teaspoon red pepper flakes optional for heat
  • salt and pepper to taste
  • fresh basil leaves for garnish
  • grated Parmesan cheese for serving, optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Prepare a large baking dish (9x13 inch) to hold all the ingredients.
  • Combine cherry tomatoes and feta cheese in the baking dish, placing feta in the center.
  • Pour olive oil over the ingredients and sprinkle garlic, oregano, red pepper flakes, salt, and pepper. Toss gently.
  • Bake for 25-30 minutes until tomatoes are blistered and feta is golden and soft.
  • Cook pasta in salted boiling water according to package instructions until al dente, then drain.
  • Mash the feta and mix with roasted tomatoes, then add cooked pasta and toss until well coated.
