- 8 ounces pasta penne or fusilli
- 8 ounces feta cheese block of feta for best results
- 1 pint cherry tomatoes sweet and burst with flavor when roasted
- 1/4 cup olive oil adds richness
- 4 cloves garlic, minced brings aroma and depth
- 1 teaspoon dried oregano adds Mediterranean touch
- 1/2 teaspoon red pepper flakes optional for heat
- salt and pepper to taste
- fresh basil leaves for garnish
- grated Parmesan cheese for serving, optional
Preheat your oven to 400°F (200°C).
Prepare a large baking dish (9x13 inch) to hold all the ingredients.
Combine cherry tomatoes and feta cheese in the baking dish, placing feta in the center.
Pour olive oil over the ingredients and sprinkle garlic, oregano, red pepper flakes, salt, and pepper. Toss gently.
Bake for 25-30 minutes until tomatoes are blistered and feta is golden and soft.
Cook pasta in salted boiling water according to package instructions until al dente, then drain.
Mash the feta and mix with roasted tomatoes, then add cooked pasta and toss until well coated.
