Preheat your oven to 350°F (175°C).
Chop the bacon into small pieces, dice the onion, and mince the garlic. Prepare the cauliflower rice if using fresh.
In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove bacon and set aside, keeping the drippings.
Add ground beef, diced onion, and minced garlic to the skillet. Cook until beef is browned and onion is translucent, about 5-7 minutes. Drain excess fat if necessary.
Stir in salt, black pepper, smoked paprika, and oregano into the beef mixture.
In a separate bowl, whisk together heavy cream, cream cheese, and eggs until smooth. Add the beef mixture and cauliflower rice, stirring until combined.
Pour the mixture into a greased 9x13-inch baking dish. Spread evenly and top with crispy bacon and shredded cheddar cheese.
Bake in the preheated oven for 30-35 minutes until set and cheese is bubbly and golden. Let cool for a few minutes before serving.
