Instructions
 

  • Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  • In a large skillet, cook the chopped bacon over medium heat until crispy, about 6-8 minutes. Remove bacon and drain on paper towels, keeping the fat in the skillet.
  • In a bowl, whisk together the eggs and grated Parmesan cheese, seasoning with salt and pepper.
  • Add the drained pasta to the skillet with bacon fat, toss to coat, then remove from heat. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. Add reserved pasta water as needed.
  • Stir in the crispy bacon and parsley, adjust seasoning if needed, and serve immediately with extra Parmesan cheese if desired.
