- 8 ounces pasta Choose your favorite type, such as penne or fusilli.
- 4 slices bacon Chopped into small pieces.
- 1 cup Brussels sprouts Trimmed and halved.
- 1 cup butternut squash Peeled and diced.
- 2 cloves garlic Minced.
- 1/2 teaspoon red pepper flakes Optional.
- 1/2 cup grated Parmesan cheese For a creamy finish.
- salt and pepper To taste.
- 2 tablespoons olive oil To sauté the vegetables and bacon.
- fresh parsley Chopped, for garnish.
Wash and prep your vegetables. Trim the Brussels sprouts and cut them in half. Peel the butternut squash and dice it into small cubes. Mince the garlic cloves finely.
In a large skillet, place the chopped bacon over medium heat. Cook for about 5-7 minutes, or until crispy. Remove and drain on paper towels.
In the same skillet, add olive oil and sauté the Brussels sprouts for about 8-10 minutes until tender and slightly browned.
Add the diced butternut squash to the skillet and cook for another 5-7 minutes until tender and caramelized.
While the vegetables are cooking, bring a large pot of salted water to a boil. Cook the pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
Combine the cooked pasta with the sautéed vegetables and bacon. Toss together, adding reserved pasta water as needed. Stir in grated Parmesan cheese and season with salt and pepper to taste.
