Dry Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples (about 2 medium apples)
- 1/2 cup powdered sugar (for glaze)
- 1-2 tablespoons milk (for glaze)
- Oil (for frying)
Peel and dice the apples into small pieces, about 1/2-inch cubes.
In a large mixing bowl, whisk together the flour, baking powder, cinnamon, salt, and sugar.
In a separate bowl, combine the milk, eggs, and vanilla extract. Whisk until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
Heat about 2 inches of oil in a deep skillet or pot to 350°F. Drop spoonfuls of batter into the oil and fry for 2-3 minutes on each side until golden brown.
Remove fritters with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
