Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1/2 cup powdered sugar (for glaze)
  • 1-2 tablespoons milk (for glaze)
  • Oil (for frying)

Instructions
 

  • Peel and dice the apples into small pieces, about 1/2-inch cubes.
  • In a large mixing bowl, whisk together the flour, baking powder, cinnamon, salt, and sugar.
  • In a separate bowl, combine the milk, eggs, and vanilla extract. Whisk until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
  • Heat about 2 inches of oil in a deep skillet or pot to 350°F. Drop spoonfuls of batter into the oil and fry for 2-3 minutes on each side until golden brown.
  • Remove fritters with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
