Popped Popcorn
- 3 quarts popped popcorn (about 1 cup unpopped kernels)
- 1 cup unsalted butter (equivalent to 2 sticks)
- 2 cups packed brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
Pop the popcorn using your preferred method and place it in a large bowl. Remove any unpopped kernels and let it cool slightly.
In a medium saucepan, melt the butter over medium heat. Stir in brown sugar, corn syrup, and salt. Bring to a boil and let it bubble for 4-5 minutes without stirring.
Remove from heat and carefully stir in baking soda and vanilla extract. The mixture will bubble up.
Pour the caramel sauce over the popcorn and stir to coat evenly.
Preheat the oven to 250°F. Spread the caramel-coated popcorn on a lined baking sheet and bake for 1 hour, stirring every 15 minutes.
Remove from the oven and let it cool completely before breaking into pieces.
