Popped Popcorn

  • 3 quarts popped popcorn (about 1 cup unpopped kernels)
  • 1 cup unsalted butter (equivalent to 2 sticks)
  • 2 cups packed brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions
 

  • Pop the popcorn using your preferred method and place it in a large bowl. Remove any unpopped kernels and let it cool slightly.
  • In a medium saucepan, melt the butter over medium heat. Stir in brown sugar, corn syrup, and salt. Bring to a boil and let it bubble for 4-5 minutes without stirring.
  • Remove from heat and carefully stir in baking soda and vanilla extract. The mixture will bubble up.
  • Pour the caramel sauce over the popcorn and stir to coat evenly.
  • Preheat the oven to 250°F. Spread the caramel-coated popcorn on a lined baking sheet and bake for 1 hour, stirring every 15 minutes.
  • Remove from the oven and let it cool completely before breaking into pieces.
